I need Help.

I try to eat salads most days for lunch. While at my local grocery store {which doesn't even compare to Publix--I am counting down the days until I return to my beloved} I picked up some Tyson "Southwest" Style grilled chicken strips to add to my salad. A little lettuce, some black olives, low fat cheese and the chicken were easy to throw together but I needed a dressing. In walks the best Salsa ever. Target's salsa is sooooo good. Now, I'm not a 3 alarm chick when it comes to my salsa, I like it mild (and sweet--peach salsa--yum!) so Target's Archer Farm's Original Thick and Chunky Salsa: Mild does the trick.

I mixed the Salsa with a spoonful of low fat sour cream and a few shakes of dry Ranch Dressing and viola! I created a salad with dressing that I have now eaten for 6 days straight.

{You'd never know that I'm a chick that actually likes change. As a teenager I would move the furniture in my bedroom around almost monthly...I'd do it now with the furniture in our house if it didn't drive Dr. Chick crazy.} But I digress, I need your help.

What are your salad (as a meal) and dressing ideas...obviously, I'm in a rut and need some great (healthy) salad ideas and would love to hear yours.
Bring those crunchy lettuce induced recipes on!

*that is not dust on the top to the salsa, it is condensation, pinkie swear*

spring mix lettuce, red pear slices, goat cheese, and low fat raspberry vinaigrette.

My personal favorite...rotisserie chicken, fresh mozarella, spring mix lettuce, grape tomatoes, and the salad sensations (?) dressing that you mix yourself.

I like to make a salad out of tomatoes, cucumbers, and red onions and top it with Parmesan cheese, italian seasoning, pepper, olive oil, and a little vinegar. It is extremely filling.

Here is what we eat at our house:

Spring Salad Mix
Blue Cheese Crumbles (just a few)
Sliced Strawberries
Candied Almonds or Raw Walnuts
Organic Rasperry Vinagrette....

DELISH!

I love: Baby Spinach Leaves, Craisins, Chopped Walnuts, Bleu Cheese crumbles, and raspberry vinaigrette dressing...pear slices are also a great addition!

Have you ever tried Morningstar Black Bean burgers...in the frozen section. I bake mine - not microwave...and add them to a salad with bleu cheese, red leaf lettuce, green olives, sliced strawberries or dried cranberries and cucumber.

Spring mix, sliced cucumbers, strawberries, and a handful of Archer Farms cinnamon almonds. I don't like salad dressing, so I mix the salad the night before and the sugar/cinnamon on the almonds kind of melts and makes a good topping.

My go to salad of late is iceburg lettuce (I know it's so old school, but that is what my neighbor uses and she gave me this salad), cucumber, tomato, and avocado (you can also chop up ham) and add anything else you like. I like to make the salad on a plate so it is spread out as much as possible. Then squeeze fresh lemon juice on it (1/6 to 1/8 of the lemon), use fresh ground salt and black pepper (I use McCormick's grinders) and then garlic olive oil. There are no specific measurements, but this salad is da bomb!

that dressing sounds so good, i def want to try that! im pretty boring with my salads, but i LOVE sundried tomatoes maybe give that a try? i also make my dressing at home (oil balsamic and garlic powder) and that tastes so good i've eaten it for days :)

My love for Target salsa cannot be measured. We seriously go through that stuff faster than water here.

We eat caprese salad a lot: mozz, tomato, fresh herbs, italian dressing

I like to do plain baby spinach, grilled chicken and Olive Garden salad dressing. No more..no less. :)

We just got back from Florida, and I LOVE Publix. I wish they'd expand Eastwards. It was one of my favorite parts of living in Tampa.

Anyway, about salads. I love adding grapes to salads. Strawberries spice it up a bit, too.

My favorite salad is romaine lettuce with turkey (I like Boar's Head honey roasted) and then black beans, corn, salsa and croutons. It is sort of tex-mex, but very yummy. I use straight salsa as the dressing.

I have also recently discovered the spritzers...they are quite tasty and healthy (1 calorie per spray). I can vouch for the caesar and honey mustard flavors.

That salad dressing sounds great, I'm going to have to try it!!

I used to have a great recipie for a kind of spicy vinagrette, I think I got it off www.foodtv.com, it had usual vinagrette ingredients and a few red pepper flakes.

Reading your post has made me hungry for a salad :)

I love a salad with pecans and apples. Panera has a great Fugi apple salad.

I also love a salad with dried cranberries and walnuts.

Also try out different cheeses for your salad.
