Serve It Up!

Since we moved back to the South I've started playing tennis again.  You remember my post about our big win (and the acquisition of the coveted bag tag).  I love these bags to sport my tag...specifically, I'm carrying the black floral backpack with an aqua monogram.



In addition to playing tennis we entertain.  All home matches are a chance to show up be hospitable to the other teams by serving them a fabulous meal.  One of my favorite court side dips is the Feta Black Bean dip served with Tostitos Scoops. 


Feta & Black Bean Dip
Serves 30 (This makes a TON of dip and can easily be reduced and still feed a small army) 
1/2 cup sugar
3/4 cup apple cider vinegar
3/4 cup vegetable oil
3 (15 ounce) cans black beans, drained and rinsed
3 (15 ounce) cans Shoe Peg corn, drained and rinsed
1 bunch scallions, chopped
1 bunch cilantro, chopped
1 (8 ounce) block feta cheese, crumbled

 
Whisk the sugar, vinegar and oil in a large bowl. Add the black beans, corn, scallions, cilantro and cheese and mix well. Chill until serving time. Serve with tortilla chips or corn chips.

i'm so bad at tennis!! luckily im good at golf because both of those games can be played till you're like 100 years old!! but tennis outfits are so much cuter! and that dip sounds amazing! :)
